Fall is definitely in the air around here right now so we are trying to get in our last few "grilling out" dinners. We love putting a bunch of different veggies in a plastic bag with some spices (garlic, salt, pepper) and olive oil and shaking it up to marinate. Then we place them directly on the grill to get those grill marks you see in the picture --- perfection! I also bought my husband a grill basket for a present sometime last year (that was totally a present for both of us, do you ever do that? whoops!). The grill basket works really well for veggies that might fall through the grill, such as brussels sprouts or mushrooms.
There is just something truly special about grilled veggies! They taste so much better than baked vegetables for some reason…probably due to the fact that they usually mean summer BBQs and better weather! I've learned to appreciate them more now due to the fact that there are only a few months of the year that you can actually grill out in DC. I feel like you west coasters don't appreciate grilling as much as those of us on the east! The grill basket works really well for veggies that might fall through the grill, such as brussels sprouts or mushrooms. Grill instructions: place veggies directly on grill at medium to high heat for a total of 6 minutes (about 3 minutes on each side). The key is to turn them over halfway through. Along with the grilled asparagus and zucchini we did some salmon on cedar planks (don't forget to soak the plank for a few hours) and a big steak! And some red wine of course. Happy grilling!
